Coffee from the Huehuetenango region has long been a staple in the TCC lineup. Why is coffee from this impossible to spell and difficult to pronounce region so consistently popular? Isn’t it just another clean, crisp fully washed coffee from Central America? Well, yeah, but it’s also got a bit of punch. A little rough around the edges, but in a good way. It’s got a bit more body, a bit more bite, a bit more complexity. It’s not a wet-hulled Sumatra by any means, we’re talking degrees. But degrees make a difference when you’re looking for that classic breakfast cup. You can add a bit of milk and sugar and the coffee will still shine through! Many years ago I heard it referred to as a “powerhouse” coffee and that’s always been the best word I’ve heard to describe it. And that’s why Huehuetenango coffee has become an integral base for our Espresso and House Blend (whoops, giving away company secrets out here!).

This year’s fresh crop from Rolando Sanchez’s farm, Finca Claima, continues to impress us. There's a specific flavor profile we look for when we source Huehuetenangos, and this coffee checks all the boxes. The cup is rich, buttery and bold; it’s moderately bright, and slightly complex with a warm, earthy finish. We tasted notes of dark chocolate, caramel, peach & cashew. Exactly what we want out of a classic Huehuetenango coffee!

Recommended Roast Range: City+ to Vienna (light-medium to dark)

This coffee has excellent range and will take a wide variety of roasts well. We like it best right at Full Medium or between the end of 1st crack and just before 2nd crack begins. Lighter roasts will bring out a bit more lemony brightness and mellow the spices. For more chocolate and caramel focus, take it a touch darker. Darker roasts will also accent more of the rich body and texture.

De La Finca Coffee - "Finca Claima is a small farm in La Democracia, Huehuetenango. The producers name is Rolando Sanchez and he has been producing coffee there for more than 50 years.

The main varietals included are Caturra and Catuai, planted at an altitude between 1,100-1200M. They have a small eco friendly wet mill at the farm and the parchment is then transported to the La Esperanza dry mill in Guatemala City.”

Thanks David for bringing us the absolute best coffee that money can buy. I roasted to a medium-dark roast. It has a wonderful nutty walnut flavor with a lingering finish and yet still has some sweetness.

It has been a few months since my purchase, but these beans appear to have much higher moisture content that anything I have roast in the past. Tough to get close to my normal 4 min mark for drying (160 C), First batch was splotchy, and flavor was a bit off from an earlier purchase of the same beans. Perhaps this bag is an outlier since I don’t see anyone mentioning this.

I've had a lot of good coffee before, mostly beans from Ethiopia, this Guatemala coffee is now among my favorites.

If I was told this was a natural and/or fermented coffee, after tasting it I would say “of course it is”. It is incredibly fruity. Buttery is accurate, it’s remarkable. Honestly it has everything I love in a coffee. Chocolate, Nut, Fruit, and that buttery flavor is incredible. I taste the peach notes, but also some cherry or berry notes. Easily the fruitiest washed coffee I’ve ever tasted. I was genuinely surprised. I roasted this in a Sandbox Smart R1, 150 grams per batch, stopped 35 seconds after first crack started rolling. Kept it at light-medium to emphasize the bright fruity notes, so I probably didn’t get as much chocolate taste as some people are getting, but I can taste more of that as the cup cools. PERFECTION. I wish I’d bought more, and likely will grab a 5 lb bag soon if it’s still available.

I’ve roasted a few small batches (100gr), on the link. The coffee is very good at 13-14 percent weight loss full city or a little past. At 15% weight loss i found the coffee bittering and at 12% it was acidic but lacking any sweetness. These were filter roasts for pour-overs. Still experimenting with the profiles.

I love this bean! I roast med-dark to dark roast as my preference. It is nice and flavorful. I just made a batch of cold brew with it and haven't tried it yet but it smells wonderful!

I'll be buying more of these. The roast range is wide, as the roasting notes from Captain's Coffee suggest. Great as a light roast, but also a great bean for experimenting with darker roasts as well.

This is definitely my favorite of the varieties I've ordered so far. Roasted fully city plus, and it tastes great as both an aeropress and a pour over.

First time I have used the word “buttery” and boy was it ! Very buttery, full of body and cocoa flavor with minimal acidity. Guatemalan HHT do happen to need more heat earlier in the roast / bit trickier sometimes to roast but that is why I am excited the Captain is putting in the work to produce better roast profiles to use for us mortals to import and get even better roast with less effort on our smart roasters.

Roasted light, rested 6 days. A pour-over reveals quite the bean. Creamy cocoa notes with the mouthfeel to go with it. Oh yes.
