Recommended Roast Range: City to Full City+ (Light to Medium-dark)
Start at City (light, mid-1st crack) and go as dark as Full City+ (medium-dark, when the first few snaps of 2nd crack begin) depending on your desired flavor profile. We prefer this coffee at City+ to capture the flavor of the anaerobic fermentation and natural processing; but for folks looking for a more balanced and less intense cup, we think you will enjoy this coffee at full medium (when 1st crack has ended but before 2nd crack has begun).

This is a great coffee! I definitely get
The cherry/berry and milk chocolate notes as described, but I’m getting two more notes: orange, and one that was not expected based on the description and the fact that nuts don’t even register on the notes profile—roasted peanuts, and more specifically, peanut butter! The smell of the roasted beans has a quite obvious peanut butter note. The ground coffee has that plus chocolate, and the brewed cup (pour over) has notes of peanut butter, cherry/berry, milk chocolate, and orange. A really wonderful combination!
I roasted light-medium, perhaps a bit toward medium. Approximately 12 minutes total, stopped 35 seconds into first crack. Roaster is a Sandbox Smart R1, batch was 150 grams.

I roasted this dark at 17.5% weight loss for SO espresso milk drinks (cortado). Full bodied, smooth and balanced making a good classic style milk-based espresso. Would probably serve as a good base in an espresso blend.
Such a great bean. My favorite so far. We just started going for a lighter roasting bean and this one is it. Full mouth feel. Downright creamy and smooth. So yummy.
Point blank, this is one of the most delicious coffees I've roasted since starting home roasting five years ago. It's easy to roast, and an amazing cup of coffee to start your day off on the right foot!
