Pink Bourbon Honey coffee is a rare Colombian varietal known for its pink cherries, vibrant sweetness, and complex honey‑processed depth. It combines the naturally floral, citrus-forward profile of Pink Bourbon with the syrupy body and fruit intensity created by the honey process.
What the Honey Process Adds:
Honey processing sits between washed and natural processing:
• Skin is removed, but mucilage (“honey”) is left on the bean during drying.
• Produces more sweetness, fruit intensity, and a rounder body than washed coffees.
• Drying typically takes 20–30 days on raised beds for high-end microlots.
Honey – 48-hour aerobic fermentation in cherry then 48 hours anaerobic fermentation after pulping then sun dried on raised for 35 days
Pink Bourbon is a natural mutation of the very popular Bourbon variety found and cherished in Colombia. Most commonly processed fully washed to make the most of it’s zesty brightness, subtle floral tones, it finishes crystal clean. The cup tends to be very similar to Gesha, just with slightly more subtle florality. This particular lot exhibits everything we love about Pink Bourbon and ups the sweetness which provides excellent balance to the sometimes-intense acidity. With notes of ripe ruby grapefruit, fresh raspberry, guava and pink lemonade, this coffee is tailor made for the summer! As a flash iced coffee, it’s incredibly refreshing. When brewed hot, it makes for an excellent afternoon pick me up.

Recommended Roast Range: City to Full City (Light to medium)
We like this coffee best at City to Full City (Light to medium). Most roasters will have the best results at City+ (Light-medium) or near the end of 1st crack. If you’re looking for even more vibrant citrus tones, end the roast as early as 30 seconds to 1 minute into 1st crack. Full City roasts (between 1st and 2nd crack) will offer more rounded sweetness as well as a bigger body. You could take this coffee as dark as the very beginning of 2nd crack to really tone down the brightness if you like, but you’ll lose some of the subtle fruit notes.
