Mocca Java Bundle
This is it folks, the blend that started it all. The most famous and possibly the oldest blend of all time: Mocca Java. Includes 1 pound each of Yemen Mocca Pearl of Tehama and Java Kayumas Taman Dadar Organic. We package the two coffees separately so you can experiment and find your ultimate interpretation of this age old masterpiece. Check out our notes for suggestions.

This is it folks. The grandaddy of blends. The one that started it all. There are many modern equivalents, usually with the "Mocca" component being substituted for a natural processed Ethiopian coffee and the "Java" component consisting of any wet-hulled Indonesian coffee. But this is the original!
There are lots of ways to approach this blend, so we're packaging the two coffees separately so we don't limit your opportunities to experiment. Let's start with the classic:
The Original Mocca Java: Simplicity is the name of the game here. Blend the two coffees together in equal parts (50:50) and roast them together to Full Medium (1st crack has ended but 2nd crack hasn't begun). Complex. Fruity. Earthy. Syrupy. Metric TONS of body.
The Mellow Mocca Java: Chill man, that's too much Yemen for me! Alright, I hear you, dial it back to 25% Yemen and 75% Java. Once again, blend prior to roasting and roast to Full Medium. We've tamed the highs and lows and made this an easy drinking machine. Take lighter to accent a bit more of the sweetness of the coffees (tail end of first crack) or take darker to round out the flavors even more for an even more easy to drink blend (15-30 seconds into 2nd crack).
The Mocca Java Elite: You want the most these coffees have to offer and you don't care how much work it takes to get there. Let's go back to 50:50 but this time we're going to roast the two coffees separately. Roast the Yemen light-medium (tail end of 1st crack) and roast the Java to medium-dark (early second crack). Do yourself a favor and let this one rest for 4 or 5 days. Sweet, savory, juicy, spicy, leathery...you know, complex! But you'll taste every single individual flavor and still have enough body to make the spoon stand up. For more sweetness, blend in more Yemen and for more spicy bite, add in more Java.
The (Insert Your Name Here) Mocca Java Special: This one's entirely up to you! I think the majority of folks prefer a slightly Java heavy blend (say 40% Yemen and 60% Java) but you won't know till you try it! Roast both coffees separately to Full Medium and make 3 to 5 mini-blends. Try them side by side in pour-over or Aeropress and see which one is yours.
