This blend from Oaxaca is perfect for those situations. It’s balanced, slightly sweet and not too bright with a long, warm finish. And if you need a coffee to go with dessert but not over power it, this one’s got just the right notes: dark chocolate, raisin, biscuity cookie and just a dash of lemon.

Recommended Roast Range: City+ to Full City+ (Light-medium to Medium-Dark)
Start with a Full City (Medium), or just before the second crack. Lighter to medium roasts will emphasize more brightness and the caramel tones will be more honey focused with the chocolate fading. Darker roasts will pull out more dark chocolate and raisin notes. Since this is a blend of high and low-grown beans, it’s best to pull back on your roaster’s heat a hair in order to keep from scorching the lower grown beans. For this reason it’s usually best to avoid dark roasts.

During the water process, the green coffee is pre-soaked in water to expand the beans for caffeine extraction. The hydrated green coffee is then introduced to a unique solution of concentrated coffee solubles that draw out the caffeine while minimizing the loss of flavor compounds. Once the caffeine has been removed the green coffee is re-dried and re-bagged for transport, and the extract solution is filtered of its caffeine and recycled to be used again."
