This single estate offering comes to us from Finca San Jose la Laguna in the Fraijanes region of Guatemala. Certified organic and bird friendly, it's rich, creamy and just a tad complex. Look for notes of baker's chocolate, raisin, macadamia and cinnamon.

Roasting: We like this coffee right at Full Medium or Full City edging into Full City Plus which is right at the beginning of second crack. If you can't hear the cracks, then roast until the beans are smooth and medium dark brown with no oil on the beans. Feel free to go darker if you like, this coffee takes dark roasting well.

Our Review: Roberto Orantes is the owner of San Jose La Laguna Estate located in the municipality of Fraijanes within the department of Guatemala, Guatemala. The estate is certified Bird-Friendly by the Smithsonian Migratory Bird Center and has been certified organic since 2004. La Laguna Estate is intercropped with a rich diversity of shade trees and bananas. Coffee cherries are meticulously processed at La Laguna through an environmentally friendly wet mill that utilizes recycled water. Pulp from processing is also collected, composted, and used as the base for organic fertilizer at La Laguna.
This coffee has all the characteristics we've come to expect from great Guatemalan coffee and then some. The first thing you'll notice is the deep, chocolatey aroma, especially fresh from the grinder. The front end has the gentle brightness of dried fruit, in this case, we recognized golden raisin. The body is rich, full and creamy with a pleasant walnut finish that lingers on the tongue. This coffee leans towards slight complexity with a bit of an earthy mix of baker's chocolate, toffee sweetness and even a bit of spicy cinnamon. An absolutely fantastic cup!
