The SR800 is a direct upgrade to the SR540. The only real difference is that instead of 4.5 ounces, it can now roast 8 ounces of coffee per batch.
The roaster features a new heavy-duty high capacity fan and heater as well as an improved control board. All adjustments are made with pushing the knob and turning to adjust the heat, fan, and time. It also features a real-time temperature readout! A quick turn of the knob to the right will display the current temperature. There are now 9 levels of heat adjustment compared to having a Low, Medium, and High adjustment. The fan also has a wider range of adjustment. Users are also able to change the default start settings.
For example, you can now begin your roast on a low temp, high fan speed, to warm and dry the beans while keeping them moving to avoid scorching. Once the beans are dry and yellow, you can turn the heat up to high, lower your fan speed to let the heat build so that you can ramp up to first crack quickly - still without scorching.
This roaster is an excellent choice for people who roast a wide variety of coffee (decaf, high grown hard bean, island coffees, etc.) or who use different brewing methods such as drip, French press or espresso.
This roaster gives you control of the main roasting variables: time, temperature and air, which means you can turn out "just right" batches time and time again.
How it Works
The SR800 is a "fluid bed" roaster. In this case the fluid is air. The machine depends on hot air flow to not only heat the beans, but also to agitate them. Coffee is like popcorn in that you need to keep it moving as it cooks. If it touches hot metal too long at a time it will scorch. The SR800 accomplishes both things nicely. It has a nice strong fan motor to keep those beans in motion and a good heater to provide the correct roasting temperature. As long as you don't overload it and try to make the machine be something it's not, it really works very well.
Roasting Tips For the SR800
The perfect batch size for a personal roaster--it roasts about 8 ounces of coffee per batch (1/2 pound). For natural processed coffees, we recommend roasting a little less, in the 6 to 7 ounces range, as natural processed beans can produce more chaff than washed and are also a bit more unpredictably sized.
On cooler days, you can decrease the fan speed and increase the temperature to help compensate for lower ambient temperatures.
In high summer, increase the fan speed to slow the roast and allow the body of your coffee to develop.
Introduce a drying/warming stage at the beginning of your roast to help lighten the beans for more even roasting. Warming will also ease your beans into the roast a little better which will give you a more stable and consistent roast.
We always recommend keeping thorough roasting notes to help achieve consistent roasts once you've nailed the perfect profile!

I've roasted four batches so far, it is working great. Before I bought this I roasted in a pan about ten times, that helped a lot to understand the phases that the roasting goes through. The controls take a little getting used to, but it works. Very easy for the heat to get away from you, so you have to watch carefully and adjust as needed. Different beans and different amounts of beans will require different adjustments, so you have to pay attention. But I believe it will become more predictable with experience. It is important to keep a log of the roasting process so you can learn and adjust your technique. I think it's fun, but you have to be willing to put in the effort.
First time roasting and the Fresh Start SR800 with extension tube seems to be the perfect place for me to start. I really enjoy being able to clearly see, hear and smell what is going on. Had my first cup today from my first roasting and it was quite good despite feeling that I messed up many things. Special kudos to The Captain's Coffee for answering all of my questions and for shipping my order right away. The sample beans they sent with the roaster are great! Also, David's videos were extremely helpful for getting me up to speed and for planning my roast strategies.

Fan-fun-tastic! Looking forward to improving my roasting skills. My first batch turned out well, despite my pearl clutching through out the roast cycle. The resulting cup had good acidity and fruity notes.
My second roast went better; good dry and maillard phases, but got caught in a rising RoR during the Dev phase and slightly over roasted the beans. However, on cupping it showed flavors of, . . . well, chocolate covered raisins.

I’ve been using an SR540 since 2019. It was finally on its last days, so I updated to the SR800. They are very durable machines, lasting several years. My 540 roasted over 2,000 batches before retirement. The 800 provides a noticeable jump in power (temp and fan) that’s capable of almost double the batch size and produces much more even roasts. I’m extremely pleased with the product quality, price point and the Captain’s top notch service!
I had an Ambex 2K but I'm so glad I scaled down to the SR800. Less waist and therefore more opportunity to perfect my roasting in smaller batches. The Captains Coffee is an all-in-one home roasters go-to store.
Not enough experience yet to give a longer-term perspective, but so far it's working great! I love the visibility of the beans, and the ability to make a lot of manual adjustments and modifications.

Nice system. I watched several videos before delving into it, but it's not what I would simple. It's like knowing how to play and actually playing golf... there is an art to it.

Finally got around to writing this review. Received my SR800 with the extension tube and sample coffee pack. Waited for a week for my friend who has been using a Behmor for several years to come and roast the first batch with me.
I had also purchased the Mastech 6514 and thermocouples seperately and installed those and set up Artisan. I have got to say that I watched David's videos on how to do this many times. Made the job so simple. Watching David's how to videos seemed like using a simulator. When I charged the roaster with the sample Brazilian coffee, I felt as if I had done this before. Using the Artisan software really helped see what was going on. I tried to duplicate one of Davids profiles. The roast took a little longer than I expected as I needed to add more energy at the beginning. But all worked out and the roast was so good. My friend commented that it was his second best cup including all his roast.
Got to say that buying from The Captain's Coffee was a good choice due to all the fantastic support that he provides his clients. Looking forward to many more fantastic roast.

This is amazing! It needs to be mastered, but it performs like a dream. This is without doubt the best roaster to enter the hobby. And the service has been excellent. The extension is also a must. Very satisfied.
I have been home roasting since the late 90’s.
I used a SR540 until now. From my very first roast with the SR800, it’s clearly a better roaster. The roast is easier to control and I accomplished the most uniform roast ever. The beans were all the same color/roast. This machine makes it possible to consistently finish the exact roast you desire!
I received my new roaster a week ago, and I am very impressed! This machine is super easy to use, even for a newbie. I've done 2 roasts so far, and after resting the coffee for a couple days, I must say it was about the best I've ever had! The Captain's Coffee has impressed me as well. I've had the SR800 for a few months and was very impressed with the results. Using Davids YouTube guidelines for various roasts really improved my understanding of what this machine is capable of. Next went the call to my youngest who like me had been using a popper with success, "guess what you're getting for your anniversary, the SR800!" The gift will be complete when the extension tube is in stock here at The Captains Coffee. I would advise those who are considering the SR800 to get the extension tube also. It works fine without it but better with.
Great roaster. Did an extensive amount of research for over a month which I narrowed down to the Behmor 200AB, Gene Cafe, and the SR800 as the final options. Lots of very useful comparison videos on YouTube from Captain Coffee and others. SR800 super easy to use, and in my humble opinion, I think the easiest intro device for novice coffee roasters. Ordered it from Captain Coffee which came with 6 pounds of green beans to practice on. Super super easy to use, and highly recommend creating a coffee journal to record each roast.
