Ethiopia Yirgacheffe Bedhatu Jibicho Natural Organic
Carefully curated by Bedhatu Jibicho, who has personally managed her farm for over 50 years, this coffee is a case study in the best a natural Ethiopian heirloom coffee can be. Jammy, juicy and intensely sweet with big notes of raspberry, strawberry and hints of jasmine and melon. Note this is a different lot from Bedhatu than our previous Crown Jewel lot, though it is from the same harvest.

Roasting: We think this coffee is at it's best roasted light around city to city plus. For best results end your roast cycle 45 seconds to a minute after first crack begins. We don't recommend taking this coffee past full medium (Full City) or just before second crack begins.

Our Review: This amazing offering is a single estate coffee, meaning it's entirely sourced from a single grower, Bedhatu Jibicho. Bedhatu’s 84-acre farm, which she has personally managed for over 50 years without the use of chemical inputs, is larger than most farms in the area. Bedhatu employs 20 year-round workers and another 130 seasonal workers for the harvest who are primarily women. For this natural processed coffee, cherries are carefully hand sorted and floated to separate out less dense and damaged coffee, and then placed on raised beds where it is hand sorted again and dried over a period of 20 days. The cherries are often covered during the afternoons to prevent harsh drying in the intense sun.
Frequent customers have probably noticed that around here we have a particular love of natural processed Ethiopian coffees, so you can rest assured we have cupped MANY of them. I'm not exaggerating when I say this is one of the best I have EVER had. Just wow. Royal Coffee, the importer of this selection, made a different lot from Bedhatu one of it's "Crown Jewel" coffees, and with good reason. This lot is from the same season and harvest, it just cupped ever so slightly differently. From our cuppings of this lot and the Crown Jewel lot, much has stayed the same. Both lots are intensely sweet, full bodied, jammy and surprisingly syrupy with a funky complexity. Both lots are also chock full of berry flavors, but here's where the differences lie based on our cupping notes. While the Crown Jewel lot was focused on blackberry and blueberry, this one is decidedly focused on raspberry and strawberry. Whether this distinction is important or not is entirely dependent on your fruity preferences. We think it's still an incredible coffee and are so happy to have it back!
