This Royal Crown Jewel is fine Central American coffee at its best. It consists of only the Caturra variety so this is a great opportunity to taste the best this cultivar has to offer! Fully washed, it's well balanced with surprisingly low acidity and excellent sweetness. It's also incredibly versatile and will work well with a wide range of roast levels. At full medium, expect notes of apple pie, fig, honey and plum.

Roasting: We like this coffee best in the medium-light (City+) to medium range (full city) though it is a very versatile coffee that performs well across a broad spectrum of roasts. Lighter roasts will be the sweetest, even showing hints of floral notes, but have a bit less body. Darker roasts will become more chocolatey while losing fruit notes. Medium roasts present an excellent compromise and have the creamiest texture.

Our Review: "The Grupo Eden collective of family farms are located in San Francisco, a community within the municipality of Pueblo Nuevo in the department of Estelí, Nicaragua. This particular lot comes from a 20-acre farm called Aguacatal, owned by Álvaro Sevilla Días, his wife and two children. Five years ago, Álvaro obtained his organic certification for Aguacatal. During the harvest Alvaro employs 60 people from the community. Álvaro takes his carefully harvested cherry to the Eden group mill where it is sorted, depulped, fermented for 24 hours, washed, density sorted in classification channels, and then slowly dried under shade cloth on elevated tables. The Eden group also has a dry mill facility to prepare coffee for export, which ensures traceability and quality control through the entire process. " - Royal Coffee

We picked up this coffee knowing full well it was likely to fly under the radar. Crown Jewels are typically hyper focused on a specific processing style, popular coffee variety or a very specific coffee lover. Say a natural processed Gesha. But this coffee, at least at first glance, looks like just another run of the mill, washed Central American coffee. But look again! This is a carefully curated microlot from Caturra only plants on a tiny family run farm. It's washed, dried and processed under exacting conditions to bring out the best this farm has to offer. And the best part? Unlike lots of hyper focused coffees, this one is incredibly versatile and will taste amazing no matter your roasting preferences. At lighter roasts, you'll get notes of green apple, fig and even hints of something delightfully floral. Darker roasts will be chocolatey, full of caramel and rounded out with sweet plum. Medium roasts will offer the best balance with a pleasant creamy texture and full body along with notes of honey, apple pie and a pleasant almond finish.
