The Captain's Feliz Navidad Organic Blend
This year we're keeping our Holiday Blend all in the family. That means we're blending our favorites from our direct trade and organic family farms into a tasty cup perfect for sharing with your family! It's rich, syrupy and full of warm winter flavors like cocoa, brown sugar, raspberry and cranberry with just a touch of baking spices and roasted walnuts. Feliz Navidad amigos!
Our favorite time of year is finally here - crisp nights, cool days and an excuse to share the fruits of our favorite hobby with family and friends. Speaking of which, this year we wanted to celebrate our partnership with De La Finca Coffee by choosing all the blend components from their family farms. That means this blend is fully direct trade and organic! On top of that, we had lots to choose from which made crafting this blend both easy and a fun exploration of everything Honduran coffee is capable of!
As we always point out in our blends, this coffee is just our interpretation of a “holiday coffee.” Our goal was a rich, comforting cup that complements our favorite holiday treats and can flex well into just about any roast range. The blend we settled on has both washed, natural and even gentle anaerobic coffees to balance body and acidity and provide a broad depth of flavor. Despite the varied nature of the blend, we find it roasts surprisingly easy and serves up well on auto drip, pour over, French press and even espresso.
In our brews we got a rich, almost syrupy cup with mild acidity and warm sweetness. Common flavor notes among the crew included cocoa, brown sugar, roasted walnuts, crisp cranberry, ripe raspberry and an assortment of baking spices. Feliz Navidad, amigos, we hope you and yours enjoy it as much as we do!
Reminder! This coffee is raw, you must roast it before brewing

We like this blend best at the Medium (Full City) roast level although this blend is comfortable with a wide roast range depending on your preference. Right at full medium you’ll experience a good balance of warm sweetness, rich body and a variety of flavors. If you’d like to pull even more texture out of it and add some more spice and roasty notes, push the roast darker, but remember the body will begin to diminish not long into 2nd crack. Darker roasts will also lose some of the berry tones in exchange for more dark chocolate notes. Lighter roasts (near the end of 1st crack) will have much more present fruit, but less chocolatey warmth.
The coffees in this blend were all sourced from our partner De La Finca Coffee’s family farms in Comayagua, Honduras. That means they’re all direct trade, organic and produced just for us!
