Colombia Risaralda Supremo
This curated blend is sourced from small- to medium-sized family-owned farms from the Risaralda Department of Colombia. Risaralda is part of “The Coffee Triangle” along with Quindio and Caldas. “The Coffee Triangle” is the largest coffee producing area of Colombia and coffee from these areas is typically mild and sweet. This offering is a blend of Caturra, Colombia, Typica, and Castillo varietals grown on farms about 2.5 hectares in size (about 6 acres). Most of Colombian producers today operate on farms less than 2 hectares or 5 acres. Coffee from Colombia is graded by size and not by defects with the two most common sizes being Supremo and Excelso. Supremo preparation means the coffee beans are sized on screens 17 to 18 (out of 20 with 20 being the largest) while Excelso preparation are beans that fall between screens 15 to 16. Bigger beans don’t necessarily mean better coffee but it can’t hurt right?
As you might expect of coffee from The Coffee Triangle, this crafted blend features the traditional Colombian profile: fairly sweet with flavors of dark chocolate and caramel. You also get a nicely balanced cup with full-body, creamy texture, and a clean finish. There’s a subtle brightness coming through as orange zest and we also tasted notes of cherry and hint of almond. We think this is a great option for those who are looking for a great tasting Colombian coffee that is also budget-friendly.

We like this coffee best at Full City (Full medium) as most roasters will have the best results at Full City (full medium) or between 1st and 2nd crack. Go slightly lighter, to around the tail end of 1st crack, to bring out some bright citrus notes like orange zest. Roasts taken to the darker side of medium will find the milk chocolate notes turn a bit more cocoa heavy more like dark chocolate and you’ll squeeze a bit more texture and body out of the cup. Roasts taken a little further into second crack will turn the dark chocolate into almost baker’s chocolate and give up fruit notes for more emphasis on chocolate and nuts.
