Young farmer Hamilton Domingues has proved his natural talent for processing with this delightful coffee. It's honey processed with a 24 hour ferment resulting in a cup that's heavy on florals with a slightly tangy front end and a clean finish. We noted tropical fruit, lime, honey, a touch of blackberry and a veritable bouquet of floral tones.

It’s been a while since we had an opportunity to showcase the Nariño region of Colombia, so we got really excited when we saw this micro-lot! Hamilton Domingues took over the family coffee farm at the ripe old age of 16 after his father after his father tragically passed away. In the face of adversity, he has proven himself resilient with a natural talent for coffee and a keen eye for excellent processing. We’re so pleased to have an opportunity to support his hard work!

Hamilton chose to ferment this coffee just a bit longer than usual for a honey processed coffee, which added some tangy brightness to the front end. I think it’s got a tangy pineapple vibe though the consensus landed on “tropical fruit” as a safe flavor note. The front end is filled out with some crisp lime and rounded out by plenty of sweet honey. There’s also some blackberry in the cup, though I wouldn’t call it the star of the show. Finally, the cup has some lovely floral tones, especially in the nose. Lavender? Jasmine? Bergamot? We couldn’t land on one for sure, it felt like it could be all three! Overall, the cup is slightly complex, smooth and creamy. Lastly, we noted it had a surprisingly clean finish for a honey rounding out an absolutely delightful cup.

Recommended Roast Range: City+ to Full City+ (Light-medium to medium-dark)

We like this coffee best at City+ to Full City+ (Light medium to medium-dark), Most roasters will have the best results at Full City (full medium) or between 1st and 2nd crack. Go slightly lighter to emphasize citrus and floral notes ending the roast at the tail end of 1st crack. For darker roasters, we advise not going past the first few snaps of 2nd crack. At this roast you’ll get a bit more body, at the expense of the more subtle floral tones.
