Roasting: 

Start with a Full City Plus (medium-dark), or a few seconds into the second crack.  Because of the natural processing that imparts a lot of sweet, floral, and spice notes to the coffee we do not recommend roasting this darker than vienna, since this will mute almost all of these flavors.  However, the beans are dense enough to roast as dark as you like.
 

Our Review

The majority of the Wahana Estate's coffee production is wet processed, but this estate likes to do things out of the box, experimenting with different tree varietals, processing methods, and the like.  This natural coffee comes 100% from the Rasuna coffee tree, which is a hybrid plant taken from the Typica and Catimor varieties.  Rasuna trees originate in Sumatra and is a relative newcomer to the industry.  The Wahana Estate currently alots this varietal over 90 hectares of its property in the Sidikalang hills.  These are shade grown trees, which is not just good for the environment, coffee trees grow best in the shade where the fruit is sheltered from the wind and too much direct sunlight.

The Wahana Estate claims to follow all the organic and rainforest alliance growing and processing protocols, but they are not yet certified in either one.  This is not uncommon, since obtaining actual certification can take years.  It is at least good to know that they are on their way to achieving certification.

So how does it taste?  In a word: fantastic.  Bearing in mind that I bias towards dry processed coffees, I'm still personally very excited about this one.  Fruity and complex, this is not a mild, one-note coffee.  This is not a coffee to drink absent mindedly.  It demands attention from the first wash of the aroma.  It is fruity, yes, but there is also a nice earthy, boldness to the body that keeps the coffee "grounded" in Indonesian flavor territory.  If you are familiar with other Sumatran coffees, you will recognize them here but you will also encounter other things that you are likely not used to in typical Sumatrans.  The fragrance is very much like green apple and perhaps some cherry.  It's really very striking when you first smell it.  

There are juicy candied watermelon and strawberry notes alongside a vibrant, earthy medium-full body and a suprisingly short (for a Sumatran coffee) finish with pepper & mesquite that lingers on the palate for just a moment.  We detect a medium acidity.

* SPECIAL ROASTING NOTE: Please be aware, the unusual processing method of this wonderful coffee will lead to some special roasting considerations! The beans swell to ENORMOUS size while roasting which means you'll need to drop your batch size by about 10%. Also, we HIGHLY recommend letting this coffee rest 2 to 3 days before brewing as it takes some time for the flavors to develop and settle as the gasses escape.

Returns Policy

If you are unsatisfied with your green coffee purchase, we will issue you a refund in the form of an in-store credit. Since coffee is a food item, we can't take it back once it leaves our control. We will work closely with you to insure you get the quality you expected at a price that is fair. This offer is good for 30 days from the date of shipment. We will faithfully adhere to this policy for every customer, unless that customer is repeatedly abusing it. We withold the right to deny refunds, in rare cases, where a customer is repeatedly ordering coffee and then asking for a refund.

Home Coffee Roasters

The Gene Cafe and Behmor 1600 Plus are covered by a 1 year warranty from the manufacturer. The Fresh Roast SR-300 and SR-500 come with a 1 year warranty on the base unit and a 6 month warranty on the chaff collector, top cap and basket. Since the roasters are UL certified, the manufacturers ask that we refer all warranty issues directly to them. Although we do not directly provide repair service, we'll help you through the process to get your roaster back up and running. Should you return an unused roaster to us, we will refund your purchase minus the original shipping cost. Once you've used your roaster, we really can't take it back.

Other Items

Any item not covered by a manufacturer's warranty is warranted by The Captain's Coffee to meet or exceed your expectations. If you are dissatisfied with your purchase for any reason, you may return the item to The Captain's Coffee for a replacement or refund in the form of an in-store credit. This offer is good for 30 days from the date of shipment. If applicable, the manufacturer's warranty will supersede this warranty for items sold by The Captain's Coffee.

We currently ship to any location in the US with the notable exception that Note that Hawaii Department of Agriculture regulations won't allow us to ship raw coffee to Hawaii.

If you select the "Captain's Special" shipping method, please note that the choice of carrier and delivery method is then entirely at our discretion. For local pick-ups, please allow 24 hours for us to prepare your order before dropping by to pick it up. Shipping weight is calculated in US Pounds.
