Roasting: City + to Full City +, Light-medium to medium-dark. This coffee is pretty versatile so start at just the very beginning of the 2nd crack, but feel free to experiment darker.
Recommendation: This coffee is a crowd pleaser and a go-to! Great by itself for an easy drinking morning cup, or an iced coffee in the afternoon. It's also a wonderful blender and will add sweetness and mellow flavors to any blend.

Our Review: Located in the mountainous region of Cajamarca, Peru, The Sol y Cafe Co-op was established in 2008 to unite over 1,000 farmers, including producers of rice and cacao. It was originally formed to collectively make agronomic and economic decisions. Their main objective was to protect the environment and to help communities and their families develop and progress. They continue to work towards the sustainability of their crops and development for the future by maintaining their Organic and Fair Trade certifications.
This Peruvian coffee is sure to be a crowd-pleaser. It's so balanced, clean and versitile that anyone will love this one. You can go light to medium with it and really bring out the bright and sweet notes of caramel and ripe lemon, or go darker and round out the heavier caramel, a bit of dark chocolate and additional body. We like it right in the middle so you get a balance of both. If you've got that friend that just has to have a dark roast, this coffee will even do French Roast well as it's so dense and roasts very evenly.
