Roasting: We like this coffee right at Full City (Medium). It's pretty versatile and roasts evenly so you can experiment with the roast levels if you like. The flavor changes--more sweetness in lighter roasts and chocolate tones pick up and become increasingly darker chocolate as your roast progresses.
Recommendation: For people who enjoy a mild, smooth sweet cup of coffee without aggressive edginess or distracting complexity.
Reminder: This is raw coffee. You have to roast it before brewing.
Our Review: This mountain water process decaf comes to us from one of our favorite Peruvian producers: Sol y Cafe. Cooperativa de Servicios Multiples Sol y Café Ltda (Coop Sol y Café) was established in March of 2008 to unite over 1,000 farmers. This included rice and cacao producers. The co-op was originally formed to collectively make agronomic and economic decisions. One of their objectives was to protect the environment, and to help communities and their families to develop and progress. They continue to work towards the sustainability of their crops and development for the future by maintaining the Organic and Fair Trade certifications.
Like most Peruvian coffees, this decaf is mild, gentle and easy going. But that doesn't mean it's boring! Well balanced with a medium to full body, this one is sure to be a crowd pleaser. Look for notes of sweet milk chocolate, caramel and mild lemon with a clean finish.
