Processing: Fully Washed, hand-picked, sun-dried
Varieties: Typica, Caturra, Pache, Bourbon and Catimor
Roasting: Start with a City Plus roast (Medium), or just right at the second crack. If you can't hear the cracks, then roast until the beans are smooth and medium dark brown with no oil. Beware of going too dark with this coffee or you'll lose the sweet subtle body and finish.
Recommendation: Honestly, just about everyone will enjoy this coffee. The sweetness, and light body make it very accessible to coffee lovers and those new to coffee alike.
Reminder: This is raw coffee. You have to roast it before brewing.
Our Review: This is a coffee that comes to us from the El Cautivo Coop located in San Ignacio, Cajamarca, Northern Peru. The Cautivo Cooperative of Peru is run by a group of organized farmers,and they have formed a legal association. The members of the co-op strive to improve the standard of living of all involved, they promote water management, environmental protection, and the production of organic materials, like fertilizers.
Coffees from Peru have an interesting typical flavor profile. They usually represent some of the mildest, and sweetest coffees available. This Cautivo is no exception. It is quite sweet, with a medium to full body, and a creamy texture. This is what I call a "palate cleanser" coffee. I usually go for the wilder, bolder coffees. But after a while, I get a little burned out on those and want a change. Peruvian coffee is often where I go when I'm in that kind of mood. It's mild, balanced, and easy on the palate, but not boring or insipid.
This is a very drinkable coffee that will have very wide appeal to all kinds of coffee drinkers but still maintain a distinct character. It's also a fantastic blender that will make house blends more approachable and sweet.
