From the Segovia mountains of Nicaragua, this coffee is mild, drinkable and easy going. It's full of sweet milk chocolate notes and a touch of citrus.

Roasting: Start with Full city (Medium) or at the very beginning of the 2nd crack but feel free to carry it into Vienna (Medium-Dark). Expect more sweet milk chocolate with lighter roasts which will transform to a more bitter dark chocolate at darker roasts. This coffee roasts very evenly.

Over 2300 small-scale farmers have joined together to create the Central Multiple Service Cooperative, also known as Prodecoop. The farms are located in the Segovia Mountains of Nicaragua, an area that includes the regions of Madriz, Nueva Segovia and Esteli. This region is located right across the border from El Salvador and just to the west of the Jinotega and Matagalpa regions, which are more well known coffee producing regions. Don't let this fool you, the Segovia Mountains produces some of the best coffee in the Americas, and while less known than its neighboring regions, coffee from these beautiful mountains continues to impress us!
The first thing we thought while cupping this coffee was how incredibly drinkable it is. If you're a fan of good beer, it's like a lager, drinkable and mild like a Budweiser but flavorful and subtle like a lager from your favorite craft brewery. Except coffee flavored! It's got a mild, slightly crisp and clean finish and the whole flavor profile is very balanced with notes of citrus (we kept arguing over whether it was lemon or lime, you decide!) and sweet, creamy milk chocolate. Overall, a great and easy going cup of joe everyone is sure to enjoy.
