Mexico El Triunfo Biosphere Reserve Organic
This unique coffee comes to us from a collective of small holder farms located on the outskirts of the El Triunfo Biosphere Reserve in the Sierra Madre mountains of Chiapas. Surprisingly complex for a fully washed coffee, this offering features a buttery body with notes of tart apple, butterscotch, cinnamon and mango with a dry finish.

Roasting: We like this coffee best right at Full City (medium). Feel free to take it a bit darker into Full City + if you're looking for a bit more body, though you may lose some of the sweetness. Roast as light as City+ if you would like to really accent the tart and winey characteristics.

Our Review: This coffee is sourced from family-owned farms organized by the Cooperativa Campesinos Ecológicos de la Sierra Madre de Chiapas (CESMACH), which operates in 35 communities and 478 producers spread throughout the southern end of the Sierra Madre mountain range in the state of Chiapas, Mexico. Most of the producers have less than 10 acres of coffee cultivation with elevations reaching 1750 meters above sea level near the El Triunfo biosphere reserve. Producers have a strong commitment to organic practices, which provides a protective buffer for more than 800 plant species and 390 bird species that make their home in El Triunfo. Each producer processes coffee with their own micro-wet mills and dry the coffee in the sun on patios before transporting the coffee in parchment nearby warehouses. In addition to providing local warehouses to ease the burden of transportation costs to producers, CESMACH has also recently invested in building a centrally located dry mill facility where the coffee is prepared for export, which ensures full control of traceability and quality control throughout the post-harvest process.
This coffee's cup is as unique as it's story. We were so surprised by the complexity of this coffee that we had to double check our notes and be sure it wasn't a natural process. What a wild ride this coffee is! The first thing you'll notice is a tart, green apple front end which gives way to a buttery rich body. We noted sweet butterscotch and mango alongside spicy cinnamon. Finally, the finish is dry and malic, much like a tart white wine. This unique coffee is an absolute must try for an adventurous palette!
