Roasting: Light-Medium to Medium (City + to Full City). Expect slightly uneven roasting due to the nature of honey processed coffees, in this case, it's a good thing that adds to the complexity and interest in the cup!
Our Review: This honey processed coffee from the COMSA coop in Honduras was produced exclusively for one of our favorite importers, Royal NY. COMSA is one a role model for coops in Central America having set goals during their inception in 2000 to transform the lives of their farmers and the local community. In the past 16 years they have integrated organic farming techniques, applied for and been granted Fair Trade status and financed many community projects including subsidizing teacher's salaries, buying school supplies, building kitchens for schools and much more. We're proud to support their efforts to not only produce amazing coffee but impact the coffee growing community for the better!
We've never had a coffee from COMSA we didn't like and we were incredibly excited to try a honey processed coffee from Honduras! Honey processing is a relatively recent method that involves leaving the final layer of fruit (called the mucilage or "honey" layer) on the coffee to ferment before washing and drying. Unlike natural processed coffee (which leaves the entire fruit and pulp on the bean to ferment) this creates an excellent middle ground between the two most common methods. It's got the sweet and slightly funky character associated with natural but retains more of the brightness of a washed coffee. This coffee is a great example of the honey process! Expect a full body and notes of green apple, caramel and cherry. Keep in mind that similar to natural processed coffee, honey processed coffee will also roast slightly unevenly.
