Our Review: "Here is one of those rare opportunities where all that is good about coffee intersect. Simply a trifecta of: organic farm management practices; traceable to women producers in the Marcala region, a protected designation of origin (DENOMINACION DE ORIGEN CAFE DE MARCALA); and a meticulous post-harvest standard of hand sorting cherry, cherry floating to remove less dense and damaged beans, proper fermentation, and long drying times. It starts with a concept called Finca Humana (the Human Farm) at Café Organico Marcala, S.A. (COMSA), where the well being of humans is the core objective and educating more than 1,500 producer-members to successfully live in harmony with nature is everywhere. COMSA dedicates funding from the proceeds of coffee sales to run a cutting edge International school dedicated to filling children’s minds with possibility, and training them to be the future leaders of Finca Humana. And COMSA has significantly increased the participation of women within the organization, which has resulted in an active women’s group that processes their own community lots called Manos de Mujer." - Royal Coffee
There's no better feeling for us than supporting a project like COMSA and Manos de Mujer, especially when it's consistently one of the best Honduran coffees we've had year over year. And this year was an incredible one since we were able to get this coffee in three different processing methods! Here's a brief breakdown of our review for each:
Full Washed: We found the body to be surprisingly rich for a Honduran coffee! The texture is creamy and the finish has a delicious peanut buttery flavor that compliments the cup. Speaking of, the flavors are also quite balanced and throughout the cup we found notes of raspberry, mango and dark chocolate. Highly drinkable, yet interesting and full of rich body and sweet flavors, this coffee is amazing black yet goes perfectly with cream or steamed milk! One of our favorite "go-to" coffees we love having around and you will too.
Honey Processed: This one was also surprisingly rich for a Honduran coffee! The texture is creamy and the sweet fruity flavors linger during the finish. The flavors are, as expected with honey processing, a bit complex and throughout the cup we found notes of apricot, caramel, matcha, red currant and dark chocolate. A super flavorful and fun cup full of rich body and sweet flavors, this coffee is amazing black yet goes perfectly with cream or steamed milk!
Natural Processed: The texture is here is still quite creamy but with a slightly less full body and the sweet fruity flavors still linger during the finish. Here again we bump the complexity up a notch to full on funky! Throughout the cup we found notes of cherry, black tea, grape juice and milk chocolate. A super adventurous and unique cup with low acidity and sweet flavors, this coffee is delightful black and perfect for an afternoon iced coffee with just a dab of simple syrup!
