Guatemala Huehuetenango Tres Marias
Our newest arrival from the always popular Huehuetenango region! It's sweeter and a bit more balanced than some of the Huehue's we've had recently while still maintaining the classic complexity and full body the region has become known for.

Grade: SHG (Strictly High Grown)
Processing: Fully washed
Roasting: Start with a Full City (medium) or at the very beginning of the 2nd crack but feel free to go darker for more dark chocolate spiciness and bite. We recommend it right at Full City+ (medium dark) for the best of both worlds.
Tres Marias is a mill owned and operated by, you guessed it, 3 generations of ladies named Maria! These lovely ladies process coffee for small local farms and after careful processing, sorting and bagging, export those coffees to the states, something the local farmers would otherwise be unable to do themselves. And after 3 generations, they've really gotten good at this coffee thing.
This coffee is definitely a mid-season selection, which means it was harvested and processed right in the middle of it's harvesting season. In the bell curve of "optimal time" that means it's right at the top of the curve and you can certainly taste it. For us that means all the things you expect from a great Huehuetenango with all the edges rounded off. It's got the same complexity, full body and creamy texture you'd expect, it's just more...refined. Look for tasty notes of milk chocolate, honey orange and mild lemon.
