This Organic selection from the AApicafi coop is everything you're looking for in Guatemalan coffee: slight complexity, huge body and delectable flavors of dark chocolate, caramel, orange and peach.

Roasting: Start with a Full City to Full City + (Medium to Medium Dark), or just barely into the second crack. If you can't hear the cracks, then roast until the beans are smooth and medium dark brown with just the first hint of sheen as the oil emerges. This coffee roasts very evenly.
Recommendation: For people who enjoy a bold, big coffee with distinct, complex flavors and a smooth finish.

Our Review: AApicafi (Asociación de Apicultores y Caficultores) which means "Association of Beekeepers and Coffee Growers was founded in 2013, with a membership of 24 small producers of coffee and honey. The objectives of the association is the preserve the environment before, during and post harvest. Their mission is the promote the continued development and growth of the families within the association including social, cultural, economic and marketing of their product.
If you're looking for a prime example of organic Huehuetenango coffee, you need look no further! It's got huge, rich body, slight complexity and moderate sweetness (translation, just enough and not too much!). This coffee will take a wide variety of roasts and is a wonderful addition to blends that need more body and just a hint of earthiness. Look for notes of dark chocolate, caramel, orange and peach.
