This coffee's farmer, Wolde Hirbe, has been producing quality microlots like this one for 10 years in a row. Funky, juicy and sweet is how we'd describe this coffee with a focus on stone fruit such as super ripe peach and nectarine along with raspberry and a floral undertone.

Roasting: We think this coffee is at it's best roasted light around city to city plus. For best results end your roast cycle 45 seconds to a minute after first crack begins. We don't recommend taking this coffee past full medium (Full City) or just before second crack begins. This coffee is also surprisingly easy to roast for a natural due to it's unusually uniform size and great density.

Our Review: "This coffee is produced by Wolde Hirbe and processed as a separate lot at the Adame Gorbota Cooperative where Wolde is a member. The Adame Gorbota Cooperative is located in the district of Wenago in the Gedeo Zone within the Southern Nations, Nationalities, and Peoples' Region, Ethiopia. Wolde Hirbe is part of the single producer project developed jointly between the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) and Royal Coffee. The project was initiated in 2012 with a handful of ‘Model’ producers from cooperatives organized under the YCFCU umbrella who have been willing to work with a rigorous set of processing standards, regular farm visits from the Royal team, and higher cup qualifications. In exchange, producers earn higher quality premiums based on the sale of their individual lots. Wolde was originally selected for the project because he has been cultivating coffee for more than 30 years and his 10 acre farm located near the community of Jemjemo is meticulously managed. This coffee comes towards the end of the Ethiopia harvesting season but it was well worth the wait! With such exacting standards on processing, Wolde has produced one of the most consistently sized naturals we've ever seen. This along with great density makes it unusually easy to roast making repeating profiles a breeze. Don't overthink development too much, this coffee does the heavy lifting for you! Just pull it near a minute after first crack begins in earnest and you should have great results. While many natural Ethiopian coffees tend to highlight bright and crisp berry flavors, this one feels more grounded with big, juicy stone fruit notes like peach and nectarine. Think almost over ripe fruit! You may notice some berry tones, but they're definitely not the star of the show here. The texture is borderline syrupy with a nice full body and funky complexity. There's also definitely a floral component to the whole cup, though it's more along for the ride instead of front and center. All in all, a spectacular coffee made all the better due to its easy roasting!
