Ethiopia Yirgacheffe Kochere Chelelektu Natural
Sweet, complex and full of berry flavors, this coffee is sure to please any fan of natural processed Ethiopian coffee. Full bodied and silky with moderate acidity, look for big notes of blueberry and strawberry accompanied with subtle lavender and a touch of baker's chocolate.

Roasting: Start at City + (light-medium) and go a bit darker as desired. We find it best not to go any darker than Full City (Medium) and in fact you could go as light as city (light) to bring out more brightness.

Our Review: This coffee is sourced from family-owned farms organized around Jemal Temam. More than 650 small coffee farmers deliver ripe cherries to the Kochere washing station where they are carefully sorted and placed on raised beds designed to ensure proper air circulation and temperature control for an optimal drying process. Cherries are also turned regularly on the beds to prevent damage during the drying process. The cherries are stored in a local warehouse after the moisture is reduced to between 11.5 and 12 percent. Then the beans are transported to Addis Ababa, the capital of Ethiopia, to be milled and bagged prior to export.
We've been all over Ethiopia this year, from Yirgacheffe to Sidamo and back, in search of that big berry flavor we love to see in natural processed Ethiopian coffees. Our first offering from the Kochere washing station fits the bill as well as an addition of baker's chocolate and a floral, lavender finish to top it all off! Keep your roast on the lighter side for full effect and you'll enjoy a moderately crisp cup with a full body and silky to creamy texture.
