Ethiopia Yirgacheffe Adado Washed Organic

This gentle yet flavorful fully washed Yirgacheffe is a relaxing break from the intensity of natural processed Ethiopian coffees. A crisp, lemonade front end is followed by floral and herbaceous notes with bergamot and a caramel undertone followed by a clean finish.

Roasting: Start at City + (light-medium) and go a bit darker as desired. We find it best not to go any darker than Full City (Medium) and in fact you could go as light as city (light) to bring out more acidity and brightness. For a City+ roast, pull the coffee as first crack trails off.

Our Review: This coffee is sourced from family-owned farms organized around the Adado Cooperative located within the coffee region of Yirgacheffe in the Gedeo Zone, Southern Nations, Nationalities and Peoples' Region, Ethiopia. The Adado Cooperative currently has 1,128 members.  In 2002, the cooperative joined the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), an umbrella organization established in 2002 to support a sustainable coffee supply from cooperatives in the Gedeo ethnic region of Ethiopia. There are twenty-six other cooperatives affiliated with the YCFCU totaling more than 45,000 members.

Natural processed Ethiopian coffees are all the rage these days, and with good reason! Sometimes, though, all those huge, twisty, funky fruity flavors can kinda wear your palette out. When you're ready for a break from the intensity of natural, reach for a fully washed Ethiopian and see the day and night difference processing makes. This particular lot is herbaceous, floral, flavorful and bright. A crisp and slightly sweet front end reminiscent of home made lemonade leads to a smooth, silky body. Floral notes accompanied by bergamot with a sweet caramel undertone are followed by a clean, refreshing finish.
