El Salvador Finca Hungria Organic
This is possibly the best El Salvadorian coffee we've seen in years! Low acidity coupled with excellent balance and gentle sweetness. You'll love the notes of brown sugar, milk chocolate, orange and red apple.
Arrival Date: February 18th, 2020
Acidity & Brightness: Low acidity, moderately sweet
Balance & Finish: Well balanced with a quick, refreshing finish
Body & Texture: Medium bodied with a smooth, silky texture
Flavor Traits: Brown Sugar, milk chocolate, orange and red apple
Grade: SHG (Strictly high Grown) very dense, grown at 1,100 masl
Certifications: Organic, Fair Trade, RFA (rain forest alliance)
Processing: Fully Washed
Variety: Bourbon, Pacas, Caturra, Catimor
Roasting: Start with a Full City (Medium), or just at the second crack. This coffee roasts very evenly. This is another coffee you'll want to experiment with across a range of roast profiles. The flavor changes--more sweetness and fruity notes in light-medium roasts and the chocolate tones pick up and become increasingly darker chocolate as your roast progresses.
Reminder: This is raw coffee. You have to roast it before brewing.
Our Review: Established in the 1930's, Finca Hungria is an organic farm that also carries the Rainforest Alliance and SMBC certifications. Significant tree cover by cedar, oak, and basalm trees provides shaded growth for the farm's coffee and a natural rainforest habitat for local birds. Largely unscathed by the Ilamatepec eruption in 2006 and the coffee rust epidemic in 2012, the farm maintains strong production and has achieved a Denomination of Origin status.
We've not been greatly impressed with El Salvadorian coffee the last few years, but this coffee has really stood out among the crowd. The closest coffee we'd compare it to is probably Peruvian. On the more subtle end of the coffee spectrum, but certainly not boring! It's got surprisingly low acidity for a fully washed coffee while still maintaining exceptional balance. This is complimented by a gentle sweetness, silky body and a clean finish. Look for notes of brown sugar, milk chocolate, orange and red apple.
