Roasting: We prefer this coffee like most Costa Rican coffees in the lighter ranges. Start with a City or City + roast (light to medium light) or just before 2nd crack. You can take it up to Full City (medium) for a bit less crisp front end and a touch more body.

Our Review: Dona Francisca and her husband Oscar Chacon of the Cumbres del Poas micro mill are 3rd generation coffee producers. The Cumbres del Poas micro mill is located in the Sabanillia de Alajuela in the Central Valley region of Costa Rica. Both Francisca and Oscar believe in preservation of the environment and are keenly interested in the preservation and conservation of the quality of the water used at their mill.
Dona and Oscar's deep passion for coffee shines throughout this exceptional cup. As you'd expect from a high quality Costa Rican cup, it's incredibly balanced and lively. Medium bodied and silky, it's got sweet and crisp notes of caramel, orange and red apple throughout with a quick, clean finish. While it certainly makes an outstanding hot cup, we love this coffee as a flash brewed iced coffee! Give it a try as either method and we guarantee you won't be disappointed.
