Roasting: We like this coffee best at a medium roast (Full City), though you'll get even more of the sweet notes at a light-medium (City+). This coffee can handle going darker, but much past Full City + and you'll lose a lot of the subtle notes and sweetness.
Recommendation: This coffee is smooth and easy drinking. Great as a classy after dinner cup or for folks who like to be awoken by a more gentle cup of joe.
Reminder! This coffee is raw, you must roast it before brewing
There are many coffee producing regions in the Andean mountains of Colombia, all with slightly unique attributes and flavor tendancies. The coffee we've been getting from the Tolima region lately has been unique and exceptional. This single estate coffee definitely showcases the best the region has to offer.
Located in the ideal microclimate betwen the Colombia Massif and the River Saldana, La Cumbre means literally "the top." In this case, we certainly think this estate is the cream of the crop. It's rich and creamy with excellent balance. Crisp yet sweet, smooth yet distinctive. Look for sweet notes of milk chocolate, orange and warm toffee. Perfect for a morning cup as we roll into the cooler months of fall!
