Roasting: We like this coffee best at a medium roast (Full City), though you'll get even more of the sweet notes at a light-medium (City+). This coffee can handle going darker, but much past Full City + and you'll lose a lot of the subtle notes and sweetness.
Recommendation: This coffee is smooth and easy drinking. Great as a classy after dinner cup or for folks who like to be awoken by a more gentle cup of joe.
Reminder! This coffee is raw, you must roast it before brewing
Our Review: There are many coffee producing regions in the Andean mountains of Colombia, all with slightly unique attributes and flavor tendancies. The coffee we've been getting from the Tolima region lately has been absolutely outstanding. This offering from the ASOTBILBAO Coop is no exception, in fact, it might be our favorite yet!
Sourced from 50 family owned farms organized within the producer ASOTBILBAO, Del Rio coffee is from Bilbao in Planadas. Members of the association are graduates of Servicio Nacional de Aprendizaje SENA. SENA is a non-governmental educational institution that provides social and technical education to its participants. ASOTBILBAO strives to improve the quality of coffee by initiating technical support to guide coffee farmers on the best agricultural practices for quality coffee production.
I mentioned earlier that this might be our favorite coffee from the Tolima region yet...and as I've been typing and sipping on it, I'm becoming more and more certain. Bold, rich body accompanied by juicy notes of orange, cherry and raw sugar (don't you dare add sugar to this coffee!) give way to a smooth, creamy texture and slightly lingering dark chocolate finish. The front end is a bit less crisp, making for a more rounded cup. Do yourself a favor and get some of this coffee before it's gone!
