Colombia Finca La Primavera Peaberry
La Primavera is our highest farm and where we have planted traditional and new varieties such as Pink Bourbon . This farm specializes in washed coffees and is where we process most of our
coffee . It always reminds me of my mother because she was the first visionary in the family to believe that we could improve our profiles from our terroir, taking care of the ecosystem . She was the first, together with her grandfather, to plant bourbon and sombrío in some lots, which has given us different microclimates and therefore a different availability of raw materials to work with.
This process is our traditional wash, a tribute to our heritage, the coffee legacy that has prevailed in 5 generations in our family . It bears the name of Lavado Primitivo, given that it highlights the characteristics of a soft Colombian wash, just as my ancestors processed coffee for decades, this is a tribute to tradition . These are the varieties that were planted by my ancestors, traditional varieties in our country . With notes of chocolate, sweet like honey or caramel and a citric acidity, characteristic of our traditional Primitivo wash .

Recommended Roast Range: City+ to Full City+ (Light-medium to Medium-dark)
We like this coffee best at City + (Light-medium) or as first crack has begun to trail off. We find this “lighter side of medium” roast level really showcases the florals and citrus in the cup. If you prefer a more balanced cup, feel free to take this coffee to a full medium, or just after first crack has trailed off. Pushing the roast into the first few snaps of second crack will yield a more chocolate focused cup at the expense of the more subtle floral notes, but the cup will pick up a bit more body and creamy texture.
