Processing: Fully Washed

Varietals: Bourbon, Catuai, Caturra and Typica

Roasting: Start with Full City to Full City + (Medium to Medium Dark) or just barely into the 2nd crack, then roast until the beans are smooth and just barely oily. Take it darker if you like, this coffee does well as a Full City + all the way to French Roast.

Our Review: Adiesto is an acronym for Asociacion de Desarrolla Integral Esperanza Toneca, a co-op dedicated to bringing sustainable and organic practices in coffee growing in the Huehuetenango region. There are currently 704 members in the co-op with membership growing every year. Huehuetenango is one of our favorite coffee producing regions, so we're incredibly excited to find out such strides are being taken to bring the world coffee that is not only delicious, but that's also grown in a responsible and sustainable manner. This was a tough bag to get hold of and we may not see it again for a bit, but when we heard about it, we had to give it a try!

Coffee from Huehuetenango is popular for a reason, it's usually rich, full-bodied and creamy with a balance of sweetness and bite that appeals to most everyone. This coffee is no exception! We found it a bit smoother and less "bitey" than some Huehuetenangos but it still had plenty of body and a tangerine note that we really thought made the whole cup just right. There's also plenty of cocoa, both in the cup and in the aroma. Grind this one up in the morning and before the coffee even starts brewing, your mouth will be watering.
