Pink Bourbon is a natural mutation of the very popular Bourbon variety found and cherished in Colombia. Mostly popularly processed fully washed to make the most of its zesty brightness, subtle floral tones, it finishes crystal clean. The cup tends to be very similar to Gesha, just with slightly more subtle florality. This particular lot exhibits everything we love about Pink Bourbon and ups the sweetness which provides excellent balance to the sometimes-intense acidity. With notes of Red Apple, Winey, Dark Chocolate, Blackberry, this coffee is tailor made for the summer! As a flash iced coffee, it’s incredibly refreshing. When brewed hot, it makes for an excellent afternoon pick me up.

Recommended Roast Range: City to Full City (Light to medium)
We like this coffee best at City to Full City (Light to medium), Most roasters will have the best results at City+ (Light-medium) or near the end of 1st crack. If you’re looking for even more vibrant citrus tones, end the roast as early as 30 seconds to 1 minute into 1st crack. Full City roasts (between 1st and 2nd crack) will offer more rounded sweetness as well as a bigger body. You could take this coffee as dark as the very beginning of 2nd crack to really tone down the brightness if you like, but you’ll lose some of the subtle fruit notes.

Colombia is known for producing high-quality coffee due to its excellent terrain and hardworking farmers. The unique topography of the Andes mountain range creates various microclimates, production providing ideal conditions for coffeeFinca Las Nubes is located in Pitalito along the Agua Negra path. The farm is owned by Claudia Samboni and her husband Rodrigo Sanchez. This exceptional washed microlot is composed of the Pink Bourbon variety. After selectively harvesting ripe cherry only, the coffee is sorted out by floating the cherries in water. Defective beans typically float and are then removed. After a second sorting by hand, the cherries are laid down to dry with their skin for around 25 - 30 days. During the anaerobic fermentation process used, the coffee is deposited for 60 hours in totally hermetic waterless cans, creating an anaerobic process. The cherries are then pulped and deposited again in the dry cans and fermented for another 140 hours, after which the coffee is washed to remove excess mucilage and dried on African beds for around 20 to 25 days.
