For coffee fanatics plugged in to the world of top tier specialty coffee, Elkin Guzman needs no introduction. He’s passionate about his coffee and takes great pride in what he brings to the cup every step of the way. As a pioneer in production and processing, he’s very engaged in the coffee community both in Colombia as well as here in the States. You might run into him rubbing elbows with World Champion Roasters and Brewers at SCA Expo or you can just follow him on Instagram! He cares about his coffee all the way from the beginning of its journey to the end and it shows in the cup.

While some might pass over the humble Caturra variety as microlot material in the age of Gesha and Pink Bourbon, Guzman set out to prove it can stand among the best of them. Thanks to careful and closely monitored traditional natural processing, this cup is a certified fruit bomb! We noted heaps of ripe strawberries, concord grape, tropical fruit and fresh squeezed lemonade. It’s refreshing, surprisingly balanced and silky smooth all with a quick, clean finish. I will be drinking A LOT of this coffee this summer, assuming it lasts that long!

Reminder! This coffee is raw, you must roast it before brewing

Acidity & Brightness: Refreshing acidity and very sweet

Balance & Finish: Balanced with a very clean finish

Body & Texture: Full bodied with a creamy texture

Flavors: Ripe strawberry, lemonade, concord grape and tropical fruit

Grade: Excelso, grown at 1615 masl

Processing: Natural Processed – Floated and hand sorted, then dried whole for 25 to 32 days.

Grower: Elkin Ferney Guzman Vargas | Finca El Mirador

Region: Pitalito, Huila, Colombia

Varieties: Caturra

Recommended Roast Range: City to Full City (Light to medium)

We like this coffee best at a City+ (light-medium) roast or as 1st crack begins to trail off (about 1:00 to 1:30 mins development). At lighter roasts, the acidity will shine through for a more refreshing cup. You’ll also get a bit more florality at the expense of sweetness (think slightly underripe versus fully ripe). Some roasters may prefer Full Medium (between the cracks or about 2 mins development) if you prioritize sweetness and want to get more body out of the cup.
