Recommended Roast Range: City to Full City (Light to medium)
We like this coffee best at a City+ (light-medium) roast or as 1st crack begins to trail off (about 1:00 to 1:30 mins development). At lighter roasts, the acidity will shine through for a more refreshing cup. You’ll also get a bit more florality at the expense of sweetness (think slightly underripe versus fully ripe). Some roasters may prefer Full Medium (between the cracks or about 2 mins development) if you prioritize sweetness and want to get more body out of the cup.
