This single estate offering comes to us from the venerable Finca La Providencia. As third generation coffee farmers, Max Palacios and his family have coffee in their genes. All that accumulated experience is evident in this rich, delicious cup. It's warm, rich and bold with notes of dark chocolate, caramel, walnut and a touch of peach.

When I see a Guatemalan coffee from the Huehuetenango region, my mind automatically conjures a warm, rich cup with deep chocolate notes, caramel sweetness, a nutty finish and body for days. Maybe a bit of complexity thrown in there to keep my palate excited and cut through a dab of cream. If that’s what you think about too, then you’ve found the coffee you’re looking for!

The Palacios family at Finca La Providencia have 3 generations of coffee farming flowing through their veins and the legacy of that rich Huehuetenango tradition shines through in every sip of this cup. Whether you’re looking for a delicious single origin brew or a tasty base for a blend, this coffee’s a stellar choice. I’m particularly excited about it joining our seasonal Espresso Blend where it will add body, texture and of course, plenty of chocolate and caramel!

Recommended Roast Range: City+ to Vienna (Light-Medium to Dark)

We like this coffee best at Full Medium (Full City) or between 1st and 2nd crack. However, it takes on a wide range of roasts well including anything from City+ to Vienna (light-medium to dark. Roasts closer to Medium will be the most balanced while darker roasts will provide a bit more body and texture. Dark roasts will lack some of the more subtle flavors such as peach, while accenting walnut and turning the dark chocolate into a more semi-sweet baker’s chocolate.

La Providencia is owned and operated by Maximiliano Palacios (Max), a third generation coffee farmer. The name of the coffee, Palhu, is formed from a combination of the family name Palacios and the department of Huehuetenango. The heart of La Providencia is a beautifully maintained mill that begins at a highpoint on the sloped property, designed to take full advantage of gravity, where the ripe cherries are placed in water and carried through the depulping process on a series of intricate canals to the drying patios below. "
