Roasting:  We prefer this coffee like most Costa Rican coffees in the lighter ranges. Start with a City or City + roast (light to medium light) or near the end of 1st crack. You can take it up to Full City (medium) for a bit less crisp front end and a touch more body. Avoid darker roasts (2nd crack onwards) or you'll lose the more subtle flavors like orange that this coffee offers.

The coffee production comes from 75 producer-members who focus their attention on organic farm management throughout the year and then deliver their harvested cherries to the COOPEASSA mill where traceability and quality control are second to none. The first word that popped into my head while drinking this coffee was "expressive"! For me, that means there is a broad range of flavors and attributes I'm detecting, yet they are all working together in harmony. The bright, shiny highs are crisp and clear with sweet notes of orange that borders on zesty. The deep notes are well defined and pleasant with great body and rich dried cherry. And right there in the middle is a lovely indulgent current of caramel and milk chocolate. It's like hearing a choir sing!
