Colombia Huila Aguazul Pink Bourbon
This coffee is a stunning example of why Bourbon is the grandfather to so many varietals grown today. Pink bourbon is a hybrid of red and yellow bourbon varieties and is nearly exclusive to Colombian producers. This offering from 14 small farmers in Huila is balanced and rich with notes of cherry, lime, guava and caramel with a floral compliment throughout.
Bourbon is perhaps the most famous coffee cultivar, having been imported from Yemen to Bourbon Island (now called La Réunion, located east of Madagascar) and eventually landing in the Americas in the mid 1800s. It's revered for it's consistent quality and has fathered other famous varieties including caturra and catuai. Bourbon has several genetic offshoots characterized by the color of the ripe coffee cherries with red being the most well known.
Pink Bourbon is fairly exclusive to Colombian producers and is a genetic hybrid of red and yellow bourbon. As the name suggests, the cherries bear a striking pink color when ripe. Appropriately, the coffee definitely has a floral undertone throughout which compliments the more forward flavors of the cup including cherry, guava, lime and caramel. Furthermore, it's very well balanced with a rich, full body and an exceptionally clean finish. This coffee is a stunning example of why Bourbon is the grandfather of so many coffee varietals!

Roasting: We like this coffee best at a medium roast (Full City), though you'll get even more of the subtle floral notes notes at a light-medium (City+). This coffee can handle going darker into Full City+ but you'll lose some subtle floral flavors and pick up some roasty, bittersweet chocolate notes.
