Brazil is well known in the coffee industry for being a mass exporter of coffee, producing 40% of the entire world’s coffee. Most Brazilian producers mass produce coffee, focusing more on quantity and less on quality. However, there is still quality coffee to be had from Brazil – enter Legendér Specialty Coffees! Legendér Specialty Coffees began in 2012 in Machado, a small town in Sul de Minas. Demilson Batista is the brains behind the operation, and he sought to work with small, family-owned and operated farms (called Sitios) in the area to produce high quality, premium coffee. Sitios have a small footprint and as such coffee from these farms is ethically sourced, sustainable, as well as traceable. Legendér incentivizes their farmers to produce high quality coffee by not only paying them fairly but paying added premiums for highly scoring coffee. One of the farmers Legendér works with is Eldo Barros, who is the producer of this offering. Each year Eldo and his wife Elina and his father Acacio produce about 500 bags of exclusively Yellow-catuai varietal coffee from their estate.
What’s great about this coffee? It’s a single estate offering from the Barros family, it’s a single varietal of Yellow catuai and it’s budget-friendly! Like most coffee from Brazil, this one is natural processed. Unlike most natural processed coffees, the profile is decidedly clean and balanced and focuses the profile on caramel and chocolate flavors rather than bold fruit and berry notes one might expect. The cup is also full-bodied with a silky texture with flavors of dark chocolate, caramel and dried fruit giving the cup a subtle brightness and moderate sweetness. This coffee is perfect for those looking for a premium quality option without breaking the bank.

Start at Full City (full medium, when 1st crack has ended but before 2nd crack has begun) and go as dark as Vienna (middle of second crack) depending on your desired flavor profile. Full medium roast is our preferred roasting level for this coffee as it will be very balanced and is likely the preferred roast level for most.
Royal Coffee NY - "Eldo Barros, or “Mortadella” to those in his community, is a coffee producer from the Posses community in the Campestre region of Minas Gerais. His nickname (and name of his farm) comes from his childhood habit of only eating the mortadella out of sandwiches his mother gave him. Over the years, the name stuck, and he now prefers the name. The coffee from this estate is exclusively Yellow Catuai and is naturally-processed. Annual production is about 500 bags, and Mortadella is aided by his father Acacio and wife Elina.”
