Panama Los Gonzalez Anaerobic Natural
Don Mariano Coffee was named after Cafetalera Los González owner Mr. Mariano González. Mr. Mariano is a passionate coffee grower that has been taking care of his farm for the last 60 years. He is also a dear member of the Boquete community.
Mr. Mariano, encouraged by his 3 daughters, joined the Specialty Coffee Association of Panama last year. He participated for the first time in the 2016 Best of Panama Competition and won 5th place in the Natural Traditionals Category. At Cafetalera Los González we are very excited that Mr. Mariano’s lifetime work can now be enjoyed in other countries.
Cafetalera Los González is located in the region of Horqueta in the Boquete Highlands and grows mostly high elevation Catuai grown at an average of 1,600 meters above sea level. It has been owned by the González family since 1920.

Processing: Anaerobic natural - Cherries are first fermented in grainpro bags for 24 hours, then transferred to fermentation barrels, where they're anaerobically fermented for 24 hours. Lastly, they're dried on raised African beds.

Recommended Roast Range: City to Full City (Light to Medium)
We like this coffee best at City + (light-medium, at the tail end of 1st crack), but it will perform well nearly anywhere in the Light to Medium spectrum. Lighter roasts accent bright acidity and fresh fruit, while medium roasts will trade a bit of brightness for body as well as bringing out more rounded, jammy sweetness.
