Our Review: This coffee is sourced from family-owned farms organized around the Cooperativa de produccion Tzeltal-Tzotzil, an organization operating in the northern part of Chiapas, Mexico. Exceptional care is taken by producers to depulp, ferment and dry their coffee, which is aided by the use of farm-owned micro mills. Coffee farms from this organization tend to be less than ten acres in size, and produce honey as well as coffee. Farm owners and producers have focused on organic production methods to protect the
environment, increase overall quality, and gain higher income to improve the livelihood of their families. This small coop only produces one container of coffee each harvest so we feel incredibly fortunate to get to try it!
It can be difficult to describe coffees sometimes as there are times when you just want to say "yeah that's just some good coffee!" Not overly sweet, crisp, balanced or big, this coffee shines in that it's kind of a jack of all trades! Maybe the best way to describe it is to call it gourmet diner coffee. You know, rich and warm, cuts through milk and sugar well and goes great with a big stack of pancakes. The most overwhelming flavors we noticed were cocoa powder and cherry with a slightly complex earthiness. Don't forget the maple syrup!
