This selection from the COCAPEC coop in Mogiana is rich bodied but not too heavy. It is relatively low in acidity, smooth and packed with cocoa and walnut notes.

Roasting: Start with a Full City (Medium), or just up to the second crack. Mogiana coffee will roast a little unevely due to the natural processing. We don't recommend carrying Brazil coffees too dark in the roasting spectrum. Since they are grown in full sun, they mature fairly rapidly. This results in a softer bean that we don't think takes to dark roasting well. If your roaster has variable temperature, avoid the hottest settings preclude scorching or "tipping". When kept to a medium dark roast, this coffee is exceptionally sweet and has a nice, gentle, mild cup. If roasted to dark, like most softer bean coffees, it can pick up an unpleasant ashy taste.
Brazil exports more coffee than any other nation. OK, so you already know that. The bulk of Brazilian coffee goes into a veritable sea of beans that gets all mixed together and ends up in commercial coffee. This Brazilian coffee, however, comes from the COCAPEC Cooperative and is first rate. The vast majority of Brazilian coffee is dry processed (the fruit is allowed to dry on the seed and then is mechanically removed instead of being soaked in a vat of water to let fermentation loosen the sticky fruit), or as a coffee marketers there call it "naturally processed". Coffee from the Mogiana region (located in the north east part of the state of Sao Paulo in southern Brazil) is a rich bodied coffee but not super heavy and syrupy. It is smooth as silk, and has a moderate to low acidity.
The rich body is joined with a very sweet and nutty flavor that make this a particularly refreshing cup. There are some distinct sweet berry flavors here as well.
This is one of the sweetest coffees we've offered, but it still has a subtle zing on the back of the tongue that keeps it firmly in Brazilian territory. It makes an excellent single origin cup when brewed as a drip coffee or in a vacuum pot. We've made some pretty fair Café Americano with it, but as of yet haven't had a chance to try it as a straight espresso. This coffee will also serve you well when you want to add some sweetness to a blend without overpowering the other coffee flavors in your blend.
Years ago Brazil was known to ship some pretty harsh coffees. Because of that an entire class of coffee commodity called "milds" was created to set those coffees apart from the Brazilian beans. In fact a coffee defect describing a harsh, metallic or medicinal taste is called "Rioy", a term associated with coffees coming out of Rio de Janeiro during that time. Hawaii Kona coffee was developed as an opposite from the harsh Brazilian coffee. We are glad to tell you that Brazil Mogiana coffee is none of that. It is a super sweet, nutty, low acidity coffee with rich body, in a mild, pleasantly refreshing cup. It's not overly complex, but sometimes you just want a pleasant cup of coffee without being hit over the head with a whangy intense cup like an Ethiopia Harrar or a Yemen Moka Sanani.
If you are unsatisfied with your green coffee purchase, we will issue you a refund in the form of an in-store credit. Since coffee is a food item, we can't take it back once it leaves our control. We will work closely with you to insure you get the quality you expected at a price that is fair. This offer is good for 30 days from the date of shipment. We will faithfully adhere to this policy for every customer, unless that customer is repeatedly abusing it. We withold the right to deny refunds, in rare cases, where a customer is repeatedly ordering coffee and then asking for a refund.

The Gene Cafe and Behmor 1600 Plus are covered by a 1 year warranty from the manufacturer. The Fresh Roast SR-300 and SR-500 come with a 1 year warranty on the base unit and a 6 month warranty on the chaff collector, top cap and basket. Since the roasters are UL certified, the manufacturers ask that we refer all warranty issues directly to them. Although we do not directly provide repair service, we'll help you through the process to get your roaster back up and running. Should you return an unused roaster to us, we will refund your purchase minus the original shipping cost. Once you've used your roaster, we really can't take it back.
Any item not covered by a manufacturer's warranty is warranted by The Captain's Coffee to meet or exceed your expectations. If you are dissatisfied with your purchase for any reason, you may return the item to The Captain's Coffee for a replacement or refund in the form of an in-store credit. This offer is good for 30 days from the date of shipment. If applicable, the manufacturer's warranty will supersede this warranty for items sold by The Captain's Coffee.
We currently ship to any location in the US with the notable exception that Note that Hawaii Department of Agriculture regulations won't allow us to ship raw coffee to Hawaii.
