This Microlot from Finca El Mirador showcases the potential of the Villa Sarchi cultivar. In contrast to many naturals, it's got round, jammy sweetness with a rich body and what we can only describe as "depth". Look for notes of strawberry and rhubarb along with caramel and chocolate ganache.

We are so lucky to have picked up some really exciting coffees from Costa Rica this year! Farmers such as Don Olman Aguilera Chaves are doing an excellent job showcasing the potential of coffee by highlighting distinctive cultivars with the intensity of natural processing. In this case, Chaves chose a lesser known variety that deserves a seat at the table: Villa Sarchi.

Also known as Villalobos Bourbon, Villa Sarchi is a naturally occurring mutation of Bourbon, just like Caturra and Pacas. Discovered in Costa Rica in the 1950s, it quickly became a staple for local coffee farmers yet never really caught on in other countries. It really seems to like natural processing as we found it easier to roast than many other natural varieties! At a light to light-medium roast it’s jammy and sweet with a surprisingly rounded character. It’s perfect for those who prefer a less bright cup and it’s also got excellent body. In comparison to other naturals, this coffee is less flashy and less intense but with more depth.

Recommended Roast Range: City to Full City (Light to medium)

We like this coffee best at City+ (light-medium) or near the end of 1st crack. However, it will perform well anywhere from City to Full Medium (light to medium). City roasts pulled early in 1st crack will bring out a little more acidity and the fruity notes will lean towards almost a sweet tart flavor . Medium roasts between 1st and 2nd crack will feature more rounded sweetness with chocolate/caramel tones.
